Beetroot, Camembert and Walnut Salad

Ingredients                      

1 Cos lettuce, sliced                                      2 Camembert wheels, diced into 1 cm cubes

150 grams walnuts                                      6 baby beetroots, halved

1/2 cup lemon juice                                     1 tbspn wholegrain mustard

Method
  1. Combine lettuce, Camembert, walnuts and beetroot in a large salad bowl.
  2. To make the dressing, combine lemon juice and mustard.

Tips:

To combine dressing, place all ingredients in a screw top jar, seal the lid tightly and shake until well combined.

Serve the dressing on the side, as it can be quite tart and not to everyone’s liking, particularly children.  It will also prevent the lettuce from going soggy and the salad will keep for a little longer.
