Orange and Poppy Seed Muffins

Makes 12 muffins

Ingredients                      

1 tbsp poppy seeds                                      2 eggs, lightly whisked

185 ml (3/4 cup) milk                                  2 tspn orange rind

375 g (2 ½ cup) SR flour                             60 ml (1/4 cup) orange juice

155 g (3/4 cup) caster sugar                        Icing sugar, to dust

125 g butter, melted

Method
  1. Preheat oven to 190˚C (170˚C fan-forced).
  2. Combine poppy seeds and milk.
  3. In a large bowl, combine flour and sugar.
  4. Add poppy seed mixture, butter, egg, orange rind and orange juice.
  5. Stir with a metal spoon until just combined.
  6. Spoon the batter into a prepared muffin tin.
  7. Bake in preheated oven for 25 minutes, or until a skewer comes out clean. Remove      from the oven and turn onto a wire rack.

Make an orange glaze from fresh orange juice and icing sugar and spoon liberally over muffins before dusting with icing sugar.
