Pork Wrapped in Lemongrass

This recipe, destined to become a regular at our BBQs, was inspired by the television show “Secret Eats with Adam Richman”.  The beauty of this recipe is, it appears to be a lot more difficult to prepare than it is.

Ingredients                      

6-8 lemongrass stalks                                        2 spring onions, finley sliced on the diagonal

1/2 bunch fresh coriander, finely chopped        6 leaves Vietnamese basil, shredded

500 grams minced pork                                      1/8 cup melted pork fat

fresh lime

Method
  1. Prepare the lemongrass stalks, by making 6-8 slices in each stalk.
  2. Place the minced pork, spring onion, coriander, Vietnamese basil and pork fat and  mix together thoroughly.
  3. Taking each lemongrass stalk form a “boat” and carefully stuff the pork mixture into each stalk, pulling the strips around the pork (the result looks like a Chinese lantern).
  4. Cook over coals, turning regularly, until cooked through.
  5. Sprinkle with coriander and Vietnamese basil and serve with lime wedges.
