Traditional Italian Waffle Biscuits

To be used with an electric Italian pizzella iron.

Ingredients                      

6 eggs                                                           12 tbsp sugar

12 tbsp olive oil                                            Plain flour, as needed

Method
  1. Heat pizzella iron as per instructions.
  2. Whisk together eggs, sugar and olive oil.
  3. Add enough flour to form a “cake batter” consistency.
  4. Place a tablespoon of the batter in the centre of the iron and close lid.

Possible Variations: 

Lemon           add fresh lemon juice to batter

Chocolate      add cocoa powder to the batter
